Collaboration with Fork Brewing in Wellington, NZ. Barrel-aged Saison with a rosehip addition. Brettanomyces Bruxellensis and other yeast/bacteria used in the barrel, then blended with some spontaneously fermented Giradin wort.
Producing a solid core range of modern fresh styles alongside the UK's finest wild and barrel aged beers. The first craft brewery in the UK to install oak foudres for ageing beers and have since installed a bespoke coolship (traditionally used for cooling hot wort for Belgium Lambic brewing).
