We might focus on local ingredients and Yonder but we are also inspired but international cuisine, processes and flavour. That's why, ever since trying umeboshi, we've been on a mission to make our own local, salted, pickled plums to flavour a beer. Boshi is a sour wild ale featuring those plums. Expect a hazy, full bodied, tart and salty beer with plum and stone fruit shining through.
Born through the combined passion for three things: Foraging, flavour and fermentation. Brewing and blending innovative and clean wild slow beers in the Mendip Hills of Somerset, with an eye towards traditional brewing methods and barrel ageing.
